Preparation of Filling

    Prepare the Walnut Filling

    In a medium bowl, combine chopped walnuts, granulated sugar, and ground cinnamon. Mix well and set aside.

Phyllo Dough Layering

    Prepare the Phyllo Dough

    Preheat your oven to 350°F (175°C). Unroll the phyllo dough and cover it with a damp kitchen towel to prevent it from drying out. Melt the butter in a small saucepan.

    Layer Phyllo Sheets

    In a greased 9x13 inch baking dish, lay down one sheet of phyllo dough and brush it with melted butter. Repeat this process, layering and buttering sheets, until you have about 8 sheets layered.

    Add Filling

    Spread a thin layer of the walnut mixture evenly over the buttered phyllo sheets. Continue layering by adding 4 more buttered phyllo sheets, followed by more walnut filling. Repeat the layering process until all the filling is used, finishing with a top layer of about 8 buttered phyllo sheets.

Baking

    Cut the Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes before baking. This will help the syrup soak in later.

    Place the baklava in the preheated oven and bake for 45-50 minutes or until golden brown.

Syrup Preparation

    Prepare the Syrup

    While the baklava is baking, combine water, granulated sugar, honey, and vanilla extract in a saucepan. Bring to a boil over medium heat, then reduce the heat and let it simmer for about 10 minutes. Remove from heat and let it cool.

Finishing Touches

    Add Syrup

    Once the baklava is done baking, remove it from the oven and immediately pour the cooled syrup over the hot baklava, ensuring it seeps into all the cuts.

    Allow the baklava to cool completely before serving. Cut into pieces along the pre-cut lines.
