    Preheat the oven

    Preheat your oven to 350°F (175°C).

    Prepare the filling

    In a mixing bowl, combine the finely chopped pistachios, granulated sugar, and ground cinnamon. Mix well and set aside.

    Prepare the phyllo dough

    Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out. Prepare a 9x13 inch baking dish by greasing it with some of the melted butter.

Assembling Baklava

    Layer the phyllo dough

    Place one sheet of phyllo dough in the baking dish and brush it lightly with melted butter. Repeat this process, layering and buttering the sheets, until you have about 8-10 sheets layered.

    Add filling

    Spread a thin layer of the pistachio mixture over the phyllo dough. Continue layering 4-5 more buttered phyllo sheets, then add another layer of pistachio filling. Repeat this process until all filling is used, finishing with a top layer of 8-10 buttered phyllo sheets.

    Cut the baklava

    Using a sharp knife, cut the baklava into diamond or square shapes, ensuring you cut through all layers.

Baking and Syrup

    Bake the baklava

    Place the assembled baklava in the preheated oven and bake for 45-50 minutes, or until golden brown and crisp.

    Prepare the syrup

    While the baklava is baking, prepare the syrup by combining water, granulated sugar, honey, and vanilla extract in a saucepan. Bring to a boil, then reduce heat and let simmer for about 10 minutes. Remove from heat and let cool.

    Soak the baklava

    Once the baklava is done baking, immediately pour the cooled syrup over the hot baklava, ensuring all pieces are well coated. Allow to cool completely before serving.
