Method

Preparation of Eggplant

    Roast the Eggplant

    Preheat your oven to 400°F (200°C). Cut the eggplants in half lengthwise and place them cut side down on a baking sheet lined with parchment paper. Roast in the oven for about 30-35 minutes or until the skin is charred and the flesh is soft.

    Cool and Scoop

    Once roasted, remove the eggplants from the oven and let them cool for about 10-15 minutes. Once cool enough to handle, scoop the flesh out of the skin and place it in a mixing bowl.

Mixing the Baba Ghanouj

    Combine Ingredients

    Add tahini, minced garlic, lemon juice, olive oil, salt, and smoked paprika to the bowl with the eggplant flesh.

    Blend

    Using a fork or a food processor, blend the mixture until smooth and creamy. Taste and adjust seasoning if necessary.

Serving

    Prepare Pita

    While the Baba Ghanouj is blending, warm the pita bread in the oven or on a skillet for about 2-3 minutes until slightly toasted.

    Serve

    Transfer the Baba Ghanouj to a serving bowl, drizzle with extra olive oil, and serve with warm pita bread on the side.
