Preparation

    Soak the Skewers (if using wooden)

    If you are using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

    Prepare the Marinade

    In a mixing bowl, whisk together olive oil, minced garlic, lemon juice, ground cumin, paprika, salt, black pepper, and chopped parsley.

    Cut the Proteins

    Cut the chicken breast, beef sirloin, lamb shoulder, and ground lamb into bite-sized pieces for skewering. For kofta, shape the ground lamb into small logs.

Marinating

    Marinate Protein

    Divide the marinade into separate bowls for chicken, beef, lamb, and kofta. Add the respective proteins to the bowls, ensuring they are coated well. Cover and refrigerate for at least 1 hour, preferably overnight.

Assembling Skewers

    Prepare the Skewers

    Once marinated, thread the proteins onto the skewers, alternating with pieces of bell peppers, red onion, and cherry tomatoes if desired.

Cooking

    Grill Skewers

    Preheat the grill to medium-high heat. Grill the skewers for about 10-15 minutes, turning occasionally until the proteins are cooked through and have nice grill marks.

    Serve

    Remove the skewers from the grill and let them rest for a few minutes. Serve warm with your favorite dipping sauce or flatbreads.
