Preparation of Bulgur

Rinse and Soak Bulgur
Rinse 1 cup of bulgur wheat under cold water in a fine sieve. In a bowl, cover the rinsed bulgur with 2 cups of boiling water, and let it sit for about 20-30 minutes until it absorbs the water and becomes tender.

Prepare Vegetables
While the bulgur is soaking, finely chop 1 cup of fresh parsley, 1 tbs of fresh mint leaves, 2 medium tomatoes, and 1 medium cucumber. Also, chop 2 stalks of green onion.

Once the bulgur is ready, drain any excess water. In a large mixing bowl, combine the soaked bulgur, chopped parsley, mint, tomatoes, cucumber, and green onion.

Make the Dressing
In a small bowl, whisk together 1 tbs of olive oil, 2 tbs of fresh lemon juice, 1 tsp of salt, and 1 tsp of black pepper until well combined.
Final Mixing

Dress the Salad
Pour the dressing over the bulgur and vegetable mixture. Toss everything together gently until well combined. Adjust seasoning with additional salt and pepper if needed.
Serving

Serve
Transfer the tabbouleh to a serving dish, and let it sit for at least 30 minutes in the refrigerator to allow the flavors to meld before serving.
