Prepare Fava Beans
Soak the fava beans in water overnight. Drain and rinse.

Cook Fava Beans
In a pot, add soaked fava beans and cover with water. Simmer for about 1 hour until soft.

Prepare Bulgur
In a bowl, combine bulgur wheat and boiling water. Cover and let it sit for 30 minutes until the bulgur absorbs the water.

Mix Ingredients
Once bulgur is ready, fluff it with a fork. Add diced tomatoes, cucumber, parsley, mint, lemon juice, olive oil, and salt.

Combine and Serve
Toss everything together and let it chill in the fridge for at least 15 minutes before serving.
Baba Ghanoush

Roast Eggplant
Preheat oven to 400°F (200°C). Poke holes in the eggplant and place it on a baking sheet. Roast for 30-40 minutes until soft.

Transfer to a serving bowl, drizzle with olive oil, and sprinkle with chopped parsley.
Green Side Salad

In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, and red onion.

In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Pour over the salad and toss to combine.
