Mixing the Dough

    Combine Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, salt, sugar, and instant yeast until well combined.

    Add Wet Ingredients

    Create a well in the center of the dry ingredients and add the warm water and olive oil.

    Knead the Dough

    Mix the ingredients together until a shaggy dough forms. Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.

Proofing the Dough

    First Rise

    Place the kneaded dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Shaping and Baking

    Preheat Oven

    Preheat your oven to 475°F (245°C) and place a baking stone or an inverted baking sheet in the oven to heat.

    Divide and Shape the Dough

    Once the dough has risen, punch it down and divide it into 10 equal pieces. Shape each piece into a ball and then flatten it into a disc about 1/4 inch thick.

    Bake the Pitas

    Carefully place the discs onto the hot baking stone or baking sheet and bake for about 5-7 minutes or until they puff up and are lightly golden.

    Cool the Pitas

    Remove the pitas from the oven and cool them on a wire rack. Serve warm or store in an airtight container.
