Method

Hummus

    Prepare the ingredients

    In a food processor, combine the cooked chickpeas, tahini, lemon juice, garlic, olive oil, salt, and water.

    Blend the mixture

    Process the mixture until smooth, adding more water if necessary to achieve your desired consistency.

    Serve

    Transfer the hummus to a serving bowl and drizzle with olive oil. Set aside.

Falafel

    Soak the chickpeas

    Soak dried chickpeas in water overnight, then drain and rinse.

    Prepare the falafel mixture

    In a food processor, blend soaked chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, and salt until a coarse mixture forms.

    Form the falafel balls

    Shape the mixture into small balls, about 1 inch in diameter.

    Fry the falafel

    Heat oil in a deep pan and fry the falafel balls until golden brown and crispy, about 5 minutes.

    Drain and serve

    Remove the falafel from the oil and drain on paper towels. Serve with tahini sauce.

Tahini Sauce

    Combine the ingredients

    In a small bowl, whisk together tahini, lemon juice, water, minced garlic, and salt until smooth.

    Adjust consistency

    If too thick, add more water until the desired consistency is reached.

Baba Ganoush

    Roast the eggplant

    Prick the eggplant with a fork and roast in the oven at 400°F (200°C) for 30-40 minutes until soft.

    Prepare the baba ganoush

    Scoop out the flesh of the roasted eggplant and place it in a food processor. Add tahini, lemon juice, garlic, salt, and olive oil.

    Blend until smooth

    Process until smooth and creamy. Adjust seasoning to taste.

    Transfer to a serving dish and drizzle with olive oil before serving.

Tabbouleh

    Prepare the bulgur

    In a bowl, combine bulgur and boiling water. Cover and let it sit for 15-20 minutes until water is absorbed.

    Chop the vegetables

    Finely chop the tomato, cucumber, and parsley.

    Mix the salad

    In a large bowl, combine the cooked bulgur, chopped vegetables, lemon juice, olive oil, and salt.

    Toss well to combine and serve chilled or at room temperature.
