Preparing the Kebab

Marinate the Lamb
In a large mixing bowl, combine cubed lamb, olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, and lemon juice. Mix well to ensure the lamb is evenly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, preferably overnight for more flavor.

Soak Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill.

Assemble Skewers
Preheat the grill to medium-high heat. Thread the marinated lamb onto the soaked skewers, packing the pieces closely together, but not overcrowding.

Grill the Kebab
Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness. The internal temperature should reach at least 60°C (140°F) for medium-rare.
Cooking the Rice

Rinse the Rice
Rinse the basmati rice under cold water in a fine-mesh sieve until the water runs clear. This removes excess starch and helps keep the rice fluffy.

In a medium saucepan, combine the rinsed rice, water, and salt. Bring it to a boil over high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until all the water is absorbed.
