Preparation

    Prepare the Grape Leaves

    Rinse the grape leaves under cold water to remove any brine. If using fresh grape leaves, blanch them in boiling water for 2-3 minutes until tender. Drain and set aside.

    Cook the Rice

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the rice and cook for another 2 minutes, stirring frequently.

    Add Tomatoes and Seasonings

    Dice the tomato and add it to the skillet along with salt, black pepper, and fresh dill. Stir to combine and cook for an additional 2 minutes.

    Mix in Water

    Pour in 1 cup of water and bring to a boil. Reduce heat to low, cover, and let it simmer for about 15 minutes, or until the rice is cooked and the water is absorbed. Remove from heat and let it cool slightly.

Assembly

    Stuff the Grape Leaves

    Place a grape leaf on a flat surface, vein side up. Spoon about 1 tablespoon of the rice mixture onto the leaf near the stem end. Fold the sides over the filling and roll up tightly from the stem end to the tip. Repeat with remaining leaves and filling.

Cooking

    Cook the Stuffed Grape Leaves

    In a large pot, arrange the stuffed grape leaves seam side down. Drizzle with the remaining 2 tablespoons of olive oil and lemon juice. Add the remaining 1 cup of water to the pot, cover, and simmer on low heat for about 30-40 minutes until the leaves are tender and the rice is fully cooked.

    Once cooked, let the grape leaves cool for a few minutes before serving. Enjoy warm or at room temperature, drizzled with extra lemon juice if desired.
