Grape Leaves Preparation

Prepare the Grape Leaves
If using fresh grape leaves, blanch them in boiling salted water for about 2-3 minutes until soft. If using canned grape leaves, rinse them under cold water to remove excess brine. Drain and set aside.

Prepare the Cooking Liquid
In a large pot, combine 4 cups of water, 1 tsp of salt, and 2 tbs of lemon juice. Bring to a boil.

Make the Filling
In a large bowl, mix together 1 cup of long-grain rice, 1 cup of ground meat, 1 finely chopped onion, 1 cup of chopped parsley, 1 tbs of chopped dill, 2 tbs of tomato paste, 3 tbs of olive oil, and 1 tsp of black pepper. Stir until well combined.

Roll the Grape Leaves
Place a grape leaf on a flat surface, vein side up. Place about 1-2 tablespoons of the filling at the base of the leaf. Fold the sides over the filling and roll tightly from the base to the tip. Repeat with remaining leaves and filling.
Cooking

Cook the Grape Leaves
In the pot with the cooking liquid, place the rolled grape leaves seam side down. Drizzle 2 tbs of olive oil and add 1 tbs of lemon juice. Pour in the broth. Cover with a plate to keep them submerged and bring to a boil. Reduce to a simmer and cook for 40-50 minutes until the rice and meat are cooked through.

Serve
Allow the grape leaves to cool slightly before serving. They can be enjoyed warm or at room temperature, drizzled with additional lemon juice if desired.
