Method
Foule Modammas

Prepare the Fava Beans
Soak fava beans overnight in water. The next day, drain and rinse the beans.

Cook the Fava Beans
In a pot, add soaked fava beans and cover with water. Simmer for about 1 hour until soft. Drain excess water.

Hummus

Prepare the Chickpeas
If using dried chickpeas, soak them overnight. Otherwise, rinse canned chickpeas.

Prepare the Chickpeas
Soak dried chickpeas overnight in water. Drain and rinse.

Make the Falafel Mixture
In a food processor, combine soaked chickpeas, parsley, garlic, cumin, coriander, baking powder, and salt. Blend until a coarse mixture forms.

Shape the Falafel
Form the mixture into small balls or patties.

Fry the Falafel
Heat oil in a deep pan. Fry the falafel in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

In a bowl, mix minced garlic with mayonnaise, lemon juice, and salt until well combined.
