Base Preparation

    Prepare the oven

    Preheat your oven to 350°F (175°C). Grease a 9” x 9” baking dish or line it with parchment paper.

    Mix dry ingredients

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar until well combined.

    Combine wet ingredients

    In another bowl, beat the eggs and then mix in the milk and melted butter until fully combined.

    Combine mixtures

    Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix.

Filling Preparation

    Prepare filling

    In a medium mixing bowl, combine the cooked chickpeas, minced garlic, ground cumin, ground coriander, olive oil, lemon juice, and chopped parsley. Season with salt and pepper to taste.

    Mix thoroughly

    Using a fork or potato masher, mash the chickpeas slightly while mixing until the mixture is well combined but still chunky.

Assembly and Baking

    Layer the base

    Pour half of the prepared base mixture into the greased baking dish, spreading it evenly across the bottom.

    Add filling

    Spread the chickpea filling evenly over the base layer.

    Top with remaining base

    Pour the remaining base mixture over the chickpea filling, spreading it evenly to cover the filling.

    Bake

    Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
