Method
Preparing the Falafel
- 1
Soak Chickpeas
Soak the dried chickpeas in water overnight (or for at least 8 hours) to rehydrate them.
- 2
Make Falafel Mixture
In a food processor, add the soaked chickpeas, garlic, onion, parsley, cumin, coriander, baking powder, salt, black pepper, and flour. Blend until the mixture is coarse and well combined but not pureed.
- 3
Form Falafel Balls
Using your hands, form the mixture into small balls or patties, about 1.5 inches in diameter.
- 4
Fry Falafel
Heat oil in a deep frying pan over medium heat. Once hot, carefully drop the falafel balls into the oil and fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.
Preparing the Hummus
- 5
Blend Hummus Ingredients
In a food processor, combine canned chickpeas, tahini, olive oil, lemon juice, garlic, salt, and water. Blend until smooth and creamy. Adjust with more water if needed.
