Method

Preparing the Falafel

  1. 1

    Soak Chickpeas

Soak the dried chickpeas in water overnight (or for at least 8 hours) to rehydrate them.

  2. 2

    Make Falafel Mixture

In a food processor, add the soaked chickpeas, garlic, onion, parsley, cumin, coriander, baking powder, salt, black pepper, and flour. Blend until the mixture is coarse and well combined but not pureed.

  3. 3

    Form Falafel Balls

Using your hands, form the mixture into small balls or patties, about 1.5 inches in diameter.

  4. 4

    Fry Falafel

Heat oil in a deep frying pan over medium heat. Once hot, carefully drop the falafel balls into the oil and fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

Preparing the Hummus

  1. 5

    Blend Hummus Ingredients

In a food processor, combine canned chickpeas, tahini, olive oil, lemon juice, garlic, salt, and water. Blend until smooth and creamy. Adjust with more water if needed.

Assembling the Dish

  1. 6

    Prepare Veggies

Chop the cucumber, tomato, and red onion into small pieces.

  2. 7

    Assemble Hummus Base

Spread a generous layer of hummus on a plate.

  3. 8

    Add Falafel and Toppings

Crumble the fried falafel over the hummus and top with chopped veggies. Drizzle tahini sauce over the top.
