Falafel Preparation

    Prepare the Chickpeas

    Drain and rinse the canned chickpeas under cold water. Make sure they are well-drained before using.

    Blend the Ingredients

    In a food processor, combine the drained chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, flour, salt, and pepper. Pulse until the mixture is finely chopped but not completely smooth.

    Form the Falafel

    Using your hands, form the mixture into small balls or patties (about 1.5 inches in diameter). Place them on a plate.

    Heat the Oil

    In a deep skillet or pot, heat the oil over medium-high heat until it reaches 180°C (350°F).

    Fry the Falafel

    Carefully drop the falafel balls into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.

Hummus Preparation

    Blend the Hummus Ingredients

    In a food processor, combine the canned chickpeas, tahini, lemon juice, garlic, olive oil, salt, and water. Blend until smooth. If the mixture is too thick, add a bit more water until you reach desired consistency.

    Taste and Adjust

    Taste the hummus and adjust seasoning with salt or lemon juice as needed.

Assembly

    Prepare the Toppings

    Dice the tomato, cucumber, and red onion into small pieces.

    Assemble the Dish

    Spread a generous layer of hummus on a serving plate. Crumble the fried falafel on top. Add the diced vegetables and drizzle with tahini sauce to finish.
