    Prepare the Eggplant

    Preheat your oven to 400°F (200°C). Prick the eggplant several times with a fork to allow steam to escape during roasting. Place the eggplant on a baking sheet lined with parchment paper.

    Roast the eggplant in the preheated oven for about 30-40 minutes, or until the skin is charred and the flesh is very soft. Turn the eggplant halfway through cooking for even roasting.

    Once the eggplant is roasted, remove it from the oven and let it cool for about 10 minutes. Cut it open and scoop out the soft flesh into a mixing bowl, discarding the skin.

    To the bowl with the roasted eggplant, add tahini, minced garlic, lemon juice, olive oil, salt, ground cumin, and paprika.

    Using a food processor or blender, blend the mixture until it becomes smooth and creamy. If the mixture is too thick, you can add a little water or more olive oil to reach your desired consistency.

    Taste the Baba Ghanoush and adjust the seasoning if necessary, adding more salt, lemon juice, or tahini based on your preference.
