Preparation of Baba Ghanoush

    Roast the Eggplants

    Preheat your oven to 400°F (200°C). Prick the eggplants all over with a fork. Place them on a baking sheet and roast in the oven for about 30-40 minutes, or until the skin is charred and the eggplants are soft. Remove from the oven and let them cool.

    Prepare the Garlic

    While the eggplants are cooling, peel the garlic cloves and set aside.

    Scoop the Eggplant Flesh

    Once the eggplants are cool enough to handle, cut them in half and scoop out the flesh into a mixing bowl, discarding the skin.

    Blend Ingredients

    Add the roasted eggplant flesh, tahini, garlic, lemon juice, olive oil, salt, ground cumin, and paprika to a food processor. Blend until smooth and creamy, scraping down the sides as needed.

    Taste and Adjust

    Taste the baba ghanoush and adjust seasoning with more salt or lemon juice if needed. Blend again to incorporate any adjustments.

Preparation of Vegetables for Serving

    Cut the Vegetables

    While the baba ghanoush is being prepared, wash and peel the carrots. Cut them into sticks. Cut the cucumber into slices and the bell pepper into strips.

    Arrange for Serving

    Place the sliced vegetables on a serving platter around a bowl of baba ghanoush. Drizzle a little extra olive oil over the baba ghanoush before serving.
