Preparation of Fish

Marinate the Fish
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped fresh parsley, salt, and black pepper to create the marinade. Place the fresh fish fillet in a shallow dish and pour the marinade over it, ensuring it is well coated. Cover and refrigerate for at least 30 minutes.

Prepare the Asparagus and Tomatoes
While the fish is marinating, prepare the vegetables. In a large skillet over medium heat, add a splash of olive oil. Once hot, add the trimmed asparagus and cook for about 5-7 minutes until tender. Add the halved cherry tomatoes and cook for an additional 2-3 minutes until they are just softened. Remove from heat and set aside.

Preheat the grill or a non-stick skillet over medium-high heat. Remove the fish from the marinade, allowing any excess to drip off. Place the fish on the grill or skillet and cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Plate the Dish
On a serving plate, arrange the cooked asparagus and cherry tomatoes as a bed. Place the grilled fish fillet on top. Garnish with lemon wedges and a sprinkle of fresh parsley. Serve immediately.
