Preparation

Infuse the Herbs
In a small saucepan, combine the star anise, coriander seeds, and dried mint leaves.

Add Water
Pour in the 750 ml of water and bring to a boil over medium heat.

Simmer
Once boiling, reduce the heat and let it simmer for about 15 minutes to allow the flavors to infuse.
Mixing

Strain the Infusion
After simmering, strain the liquid through a fine mesh sieve into a clean container to remove the herbs.

Add Sugar
While the infusion is still warm, add 100 g of sugar and stir until completely dissolved.

Combine with Liqueur
Allow the mixture to cool to room temperature, then stir in 250 ml of anise-flavored liqueur (Pernod or Pastis).
Serving

Chill and Serve
Refrigerate the Pernod Pastis for at least 2 hours before serving. Serve over ice or mixed with water to taste.
