Preparation and Cooking

    Prepare the Steak

    Remove the steaks from the fridge and let them sit at room temperature for about 30 minutes before cooking. This ensures even cooking.

    Season the Steaks

    Generously season both sides of the steaks with salt and black pepper. If using garlic, you can rub the cloves on the steak for added flavor.

    Heat the Pan

    Heat a heavy skillet (preferably cast iron) over high heat. Add olive oil and let it get hot until shimmering but not smoking.

    Cook the Steaks

    Place the steaks in the hot skillet. For RARE: Cook for about 2 minutes per side. For MEDIUM RARE: Cook for about 3-4 minutes per side. For MEDIUM: Cook for about 4-5 minutes per side. For MEDIUM WELL: Cook for about 5-6 minutes per side. For WELL DONE: Cook for about 6-7 minutes per side. Adjust the time based on the thickness of the steak.

    Add Butter and Garlic (Optional)

    For extra flavor, add butter and crushed garlic to the skillet during the last minute of cooking and baste the steaks with the melted butter.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest for about 5 minutes before slicing. This allows the juices to redistribute.

    Slice the steaks against the grain and serve immediately.
