Method

Herb Butter Preparation

  1. 1

    Make the Herb Butter

In a bowl, combine the softened unsalted butter, chopped parsley, chopped thyme, and minced garlic. Mix well until fully combined, then shape into a log and wrap in plastic wrap. Refrigerate until firm.

Pommes Frites Preparation

  1. 2

    Prepare the Pommes Frites

Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry. Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-6 minutes. Remove and drain on paper towels, then season with salt to taste.

Steak Preparation

  1. 3

    Cook the Steak

Season the NY strip steaks with salt and black pepper. Heat the olive oil in a skillet over medium-high heat. Once hot, add the steaks and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest for a few minutes.

Serve

  1. 4

    Plate the Dish

Slice the rested steak and serve on a plate with a generous dollop of herb butter on top. Serve alongside the crispy pommes frites.
