    Prepare the Meat Mixture

    In a large mixing bowl, combine ground pork shoulder, ground pork fatback, and chicken liver. Add finely chopped shallots and minced garlic. Mix well.

    Add Seasonings

    In the same bowl, add thyme, bay leaves, salt, black pepper, and cognac. Mix thoroughly until all ingredients are evenly combined.

    Line the Terrine

    Preheat the oven to 160°C (320°F). Line the bottom and sides of the pâté terrine or loaf pan with bacon strips, allowing some to hang over the edges.

    Fill the Terrine

    Spoon the meat mixture into the lined terrine, pressing down to eliminate air pockets. Fold the bacon over the top of the mixture.

    Bake the Pâté

    Cover the terrine with foil and place it in a baking dish filled with hot water (bain-marie). Bake for about 1.5 hours, or until the internal temperature reaches 70°C (160°F).

    Cool and Serve

    Remove from the oven and let it cool in the water bath. Once cooled, refrigerate for at least 12 hours before unmolding. Serve chilled with bread or crackers.
