Prepare Herb Butter

Make the Herb Butter
In a small bowl, combine the unsalted butter, chopped parsley, chopped thyme, and minced garlic. Mix until well incorporated. Shape the mixture into a log, wrap it in plastic wrap, and refrigerate until firm.
Cook Pommes Frites

Prepare and Fry Potatoes
Peel the russet potatoes and cut them into thin strips. Rinse them in cold water to remove excess starch, then pat dry with paper towels. In a large pot, heat the vegetable oil over medium-high heat. Once the oil reaches 350°F (175°C), add the potato strips in batches and fry until golden brown, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

Cook the Steak
Season the prime NY strip steak generously with salt and black pepper on both sides. Heat the olive oil in a skillet over high heat until shimmering. Add the steak and cook for about 4-5 minutes on each side for medium-rare, depending on thickness. Use a meat thermometer to check for an internal temperature of 130°F (54°C). Remove the steak from the skillet and let it rest for 5 minutes before slicing.
