    Prepare the Ribeye

    Preheat the oven to 450°F (232°C). Season the ribeye roast generously with salt and black pepper. Place it on a roasting rack in a roasting pan.

    Roast the Meat

    Roast in the preheated oven for about 20-25 minutes for medium rare, or until the internal temperature reaches 130°F (54°C). Let the roast rest for 10 minutes before slicing.

    Prepare the Au Jus

    While the meat is resting, heat the beef broth in a saucepan over medium heat until simmering. Adjust seasoning to taste.

    Assemble the Sandwiches

    Slice the ribeye thinly. Cut the French rolls in half and layer with sliced ribeye, Gruyère cheese, and a spread of prepared horseradish. Place under the broiler for 2-3 minutes, or until the cheese melts.

    Serve with Pommes Frites

    Serve the sandwiches hot with a side of pommes frites and a small bowl of au jus for dipping.
