Crust Preparation

    Make the Shortcrust

    In a mixing bowl, combine the flour, powdered sugar, and salt. Add the cold cubed butter and mix until the mixture resembles coarse crumbs. Stir in the egg yolk and vanilla extract until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Bake the Crust

    Preheat the oven to 350°F (175°C). Roll out the chilled dough on a floured surface and fit it into a tart pan. Prick the bottom with a fork and bake for 20 minutes or until lightly golden. Let cool.

Honey Crème Légère Preparation

    Prepare the Gelatin

    In a small bowl, sprinkle the gelatin over the water and let it bloom for about 5 minutes.

    Make the Honey Crème Légère

    In a mixing bowl, whip the heavy cream until soft peaks form. In a separate bowl, mix the honey and vanilla extract. Gently fold the whipped cream into the honey mixture. Heat the bloomed gelatin until dissolved and then fold it into the honey crème mixture. Refrigerate until set.

Assembly

    Assemble the Tart

    Spread the orange marmalade over the cooled tart crust. Spoon the honey crème légère on top and smooth it out. Arrange the fresh fig slices on top of the crème. Chill the tart for at least 1 hour before serving.
