    Prepare the Hollandaise Sauce

    In a heatproof bowl, whisk together egg yolks and lemon juice until creamy. Place the bowl over a pot of simmering water (double boiler) and continue whisking. Gradually add melted butter while whisking until the sauce thickens. Season with salt and black pepper, then set aside.

    Poach the Eggs

    In a saucepan, bring water and vinegar to a gentle simmer. Crack each egg into a small bowl and gently slide it into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and drain on paper towels.

    Toast the English Muffins

    While the eggs are poaching, split the English muffins and toast them until golden brown.

    Assemble the Dish

    On each toasted English muffin half, layer slices of smoked salmon, followed by a poached egg. Drizzle with Hollandaise sauce and garnish with chives if desired. Season with additional black pepper if preferred.
