    Preheat your oven to 200°C (400°F). Slice the zucchini and bell pepper into thin strips. Halve the cherry tomatoes.

    Toss the sliced vegetables with olive oil, salt, and black pepper. Spread them on a baking sheet and roast in the preheated oven for about 15-20 minutes, or until tender and slightly caramelized.
