Chill glass

Place a rocks glass in the freezer for a few minutes or fill it with ice water to chill while you build the cocktail.

Combine base ingredients

Add 2 oz chacha, 0.75 oz fresh lime juice and 0.5 oz simple syrup into a cocktail shaker.

Add ice and shake

Fill the shaker with ice (about 6 ice cubes) and shake vigorously for 12–15 seconds until well chilled and slightly diluted.

Prepare glass

Discard the chilling ice/water from the rocks glass and add one large clear ice cube (or fresh ice).

Strain

Double-strain the shaken mixture into the chilled rocks glass over the large ice cube to keep the drink clear and free of shards.

Float and finish

Float Saperavi

Using the back of a bar spoon held just above the surface of the drink, slowly pour 1 oz Saperavi red wine so it floats as a thin layer on top of the chacha-lime base. Pour carefully to preserve the visual two-layer effect.

Garnish and serve

Garnish with a lime wheel on the rim. Serve immediately with a small stirrer so the guest can gently combine the Saperavi float with the chacha base as desired.
