Muddle

Place the fresh raspberries and simple syrup in the bottom of a shaker. Use a muddler to gently but firmly crush the raspberries until they release their juice and aroma (about 20–30 seconds).

Add spirits and citrus

Add the chacha and fresh lime juice to the shaker with the muddled raspberries.

Shake

Add ice to the shaker (about 6 cubes). Secure the lid and shake vigorously for 12–15 seconds until the shaker is cold to the touch and well chilled.

Double strain

Double-strain the cocktail into a chilled coupe or rocks glass (use a fine mesh strainer over the shaker strainer) to remove raspberry seeds and pulp for a smooth finish.

Serve

If serving on the rocks, pour over fresh ice in a rocks glass; if serving up, leave as is in a coupe.

Garnish & Finish

Garnish the drink with a lime wheel or wedge on the rim and a fresh raspberry skewered on a cocktail pick. Optionally slap a mint sprig between your palms to release oils and tuck it beside the raspberry for aroma.
