Prepare and combine
Chill a coupe or nick & nora glass by filling it with ice and setting aside. In a cocktail shaker, add 2 oz chacha, 0.75 oz lime cordial, 0.5 oz fresh lime juice and, if you prefer slightly sweeter, 0.25 oz simple syrup.
Shake
Fill the shaker with ice (about 1 cup). Seal and shake vigorously for 12–18 seconds until the outside of the shaker is well chilled and slightly frosted.
Strain
Discard the ice from the chilled glass. Double-strain the cocktail into the chilled coupe or Nick & Nora using a Hawthorne and a fine mesh strainer to ensure a silky texture.
Garnish & Serve
Express the lime zest over the surface of the drink to release oils, rub the rim lightly with the zest if desired, and drop a lime wheel or half-moon onto the rim or float it on the drink.
Serve immediately. The cocktail should be bright, aromatic, and slightly tart with the distinctive grape-pomace warmth of chacha.
