Prepare passion fruit

If using fresh passion fruits, cut 2–3 fruits in half and scoop out the pulp. Measure 2 oz (about 2 tablespoons per fruit usually). If using store-bought pulp, measure 2 oz.

Dry shake

In a cocktail shaker, combine 2 oz chacha, 2 oz passion fruit pulp, 0.5 oz fresh lime juice, 0.5 oz simple syrup, 0.5 oz orange liqueur and 0.5 egg white (if using). Do a dry shake (no ice) vigorously for 10–15 seconds to emulsify the egg white and integrate the pulp.

Shake with ice

Add ice (about 4 oz or a handful) to the shaker and shake vigorously for 10–15 seconds until well chilled and slightly frothy.

Strain and serve

Double-strain the cocktail into a chilled coupe or Nick & Nora glass to remove seeds and pulp fibers. Use a fine mesh strainer over the primary strainer for a silky finish.

Garnish

Float half a passion fruit (pulp side up) on top of the cocktail. Optionally tuck a small mint sprig beside it for aroma and color.
