Prepare the Steaks

Take the filet mignon steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook evenly.

Season the Steaks

Rub the steaks with olive oil, then season generously with salt, black pepper, and fresh rosemary on both sides.

Sear the Steaks

In a large skillet over medium-high heat, add the butter. Once melted and bubbling, add the filet mignon steaks. Sear for 4-5 minutes on each side for medium-rare, or until desired doneness.

Rest the Steaks

Remove the steaks from the skillet and let them rest on a plate for about 5 minutes before serving. This allows the juices to redistribute.

Serve with Barolo

Pour 5 oz. of Barolo wine into a glass and serve alongside the filet mignon steaks for a perfect pairing.
