Prepare the Steak
Season the center-cut filet mignon with salt and black pepper on both sides.

Sear the Steak
In a large skillet, heat the olive oil over medium-high heat. Add the filet mignon and sear for about 4-5 minutes on each side for medium-rare doneness. Remove the steaks from the skillet and set aside.

Make the Sauce
In the same skillet, add the chopped shallots and sauté for about 2 minutes until translucent. Pour in the demi-glace and bring to a simmer. Reduce the heat and stir in the heavy cream and dry sherry. Allow the sauce to simmer for about 5 minutes until slightly thickened.
