Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar (for crust), and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust.

Mix the Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and continue to mix. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until combined.

Bake the Cheesecake
Pour the cream cheese mixture over the crust in the springform pan. Bake in the preheated oven for about 55-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.

Chill
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight.

Serve chilled, topped with your choice of raspberry, caramel, or chocolate sauce.
