    Prepare the Portabella Mushrooms

    Preheat the oven to 375°F (190°C). Clean the portabella mushrooms with a damp cloth and remove the stems.

    Season the Mushrooms

    In a bowl, mix olive oil, minced garlic, chopped thyme, salt, and black pepper. Brush the mixture onto both sides of the portabella mushrooms.

    Bake the Mushrooms

    Place the seasoned mushrooms on a baking sheet, gill side up. Top each mushroom with a generous amount of Swiss Gruyere cheese. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is melted.

    Prepare the Port Wine Sauce

    In a saucepan, combine 1 cup of port wine and simmer over medium heat until it reduces by half. This should take about 10 minutes. Season with salt and pepper to taste.

    Serve

    Once the mushrooms are done, remove them from the oven. Drizzle the port wine sauce over the mushrooms and serve immediately.
