1. Prepare the Filet
Season the center-cut filet with salt and cracked black pepper on both sides.
2. Sear the Filet
Heat olive oil in a skillet over medium-high heat. Once hot, add the filet and sear for about 3-4 minutes on each side for medium-rare, or until desired doneness.
3. Flambé
Reduce the heat to medium, carefully add the French brandy to the skillet. Allow the alcohol to ignite and flambé until the flames subside.
4. Serve
Remove the filet from the skillet and let it rest for a few minutes. Serve with house-made mango chutney on the side.
