    Prepare the Lobster

    Bring a large pot of salted water to a boil. Add lobster tails and cook for about 5-7 minutes until shells turn bright red. Remove and cool. Once cool, remove the meat from the shells and chop it into small pieces.

    Sauté Vegetables

    In a large pot, melt the butter over medium heat. Add onion, carrot, and celery, and sauté for about 5-7 minutes until softened. Stir in minced garlic and cook for an additional minute.

    Add Tomato Paste and Wine

    Stir in the tomato paste and cook for 2 minutes. Pour in the white wine and bring to a boil. Reduce heat and simmer for 5 minutes.

    Add Stock and Simmer

    Add the seafood stock and bring to a gentle simmer. Cook for 15 minutes to let the flavors meld.

    Blend the Soup

    Using an immersion blender, purée the soup until smooth. Alternatively, transfer to a blender in batches and blend until smooth.

    Finish with Cream and Seasonings

    Return the blended soup to the pot. Stir in the heavy cream, chopped lobster meat, salt, black pepper, and cayenne pepper. Heat through but do not boil.
