Directions

  1. 1

    Prepare the Crème Anglaise

In a saucepan, combine the milk, heavy cream, and half of the sugar. Heat over medium heat until the mixture is hot but not boiling.

  2. 2

    Whisk the Egg Yolks

In a separate bowl, whisk together the egg yolks and the remaining sugar until light and creamy.

  3. 3

    Combine Mixtures

Slowly pour the hot milk mixture into the egg yolk mixture while whisking continuously to temper the yolks.

  4. 4

    Cook the Mixture

Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.

  5. 5

    Strain and Add Vanilla

Remove from heat, strain through a fine mesh sieve into a bowl, and stir in the vanilla extract. Allow to cool.

  6. 6

    Serve

To serve, place a generous amount of fresh raspberries in a bowl and drizzle with the cooled crème anglaise.
