    Make the Pie Crust

    In a large bowl, combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until mixture forms a ball. Divide in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Prepare the Filling

    In another bowl, mix sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until apples are well coated.

    Roll Out the Dough

    Preheat the oven to 425°F (220°C). On a floured surface, roll out one disc of dough to fit a 9-inch pie pan. Place the crust in the pan and fill with the apple mixture.

    Top the Pie

    Roll out the second disc of dough and place over the filling. Seal and flute the edges. Cut slits in the top crust to allow steam to escape. Brush with beaten egg mixed with milk.

    Bake the Pie

    Bake in the preheated oven for 15 minutes. Reduce temperature to 350°F (175°C) and bake for an additional 35-45 minutes, until apples are soft and crust is golden brown.

    Allow to cool slightly before serving warm with your choice of cinnamon or vanilla bean ice cream.
