Preparing Sushi Rice

Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and 1.25 cups of water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, then reduce to a simmer, cover, and cook for 18-20 minutes.

Season the Rice
In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until dissolved. Once the rice is cooked, transfer it to a large bowl. Pour the vinegar mixture over the rice and gently fold to combine without mashing the rice. Allow to cool to room temperature.

Prepare the Tuna Mixture
In a bowl, combine the sushi-grade tuna, mayonnaise, Sriracha sauce, sesame oil, and chopped green onions. Mix well until all ingredients are evenly incorporated.

Lay out Nori
Place a bamboo sushi mat on a flat surface and lay a nori sheet shiny side down on the mat.

Spread the Rice
Wet your hands to prevent sticking. Take about 1/4 of the sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly. Seal the edge of the nori with a little water.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce, wasabi, and pickled ginger on the side.
