Chicken Skewers

Prepare the Marinade

In a medium bowl, combine soy sauce, coconut milk, brown sugar, minced garlic, ground ginger, lime juice, and salt. Mix well until sugar is dissolved.

Marinate the Chicken

Cut the chicken breast into 1-inch cubes and add to the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

Prepare the Skewers

If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat the grill to medium-high heat.

Skewer the Chicken

Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.

Grill the Chicken

Place the skewers on the preheated grill. Grill for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Peanut Sauce

Mix the Sauce Ingredients

In a small bowl, combine peanut butter, soy sauce, coconut milk, brown sugar, lime juice, minced garlic, chili flakes, and water. Whisk until smooth.

Adjust Consistency

If the sauce is too thick, add a little more water, one tablespoon at a time, until desired consistency is reached.

Serve the Sauce

Transfer the peanut sauce to a serving bowl and set aside for dipping.
