Mix Dry Ingredients
In a large mixing bowl, combine shrimp powder, tapioca starch, cornstarch, salt, and sugar. Mix well until all dry ingredients are fully integrated.

Add Water
Gradually add water to the dry mixture, stirring continuously until a smooth and thick batter forms. Ensure there are no lumps in the batter.

Prepare for Frying
Cover the batter and let it rest for 30 minutes at room temperature to allow the starch to hydrate.

Heat Oil
In a deep frying pan or wok, heat vegetable oil over medium-high heat until it reaches about 180°C (350°F).

Shape the Chips
Using a spoon or a piping bag, drop small rounds of the batter into the hot oil. Make sure not to overcrowd the pan.

Fry the Chips
Fry the chips for about 2-3 minutes or until they puff up and turn golden brown. Use a slotted spoon to remove them from the oil and drain on paper towels.

Cool Down
Allow the shrimp chips to cool completely before serving. They will become crispier as they cool.
