Filling Preparation
Prepare the Vegetables
In a large mixing bowl, combine the grated carrot, shredded cabbage, sliced bell pepper, chopped green onions, and minced garlic.
Season the Filling
Add soy sauce, sesame oil, salt, and pepper to the vegetable mixture, and stir until all ingredients are well-coated and evenly combined.
Assembling Spring Rolls
Prepare the Wrappers
Lay a spring roll wrapper on a flat surface with one corner pointing towards you.
Fill the Wrapper
Place about 2 tablespoons of the vegetable filling near the corner of the wrapper closest to you.
Roll the Wrapper
Fold the corner over the filling, then fold in the sides and roll tightly away from you. Seal the edge with a little water.
Frying
Heat the Oil
In a deep frying pan, heat vegetable oil over medium heat until it reaches 350°F (175°C).
Fry the Spring Rolls
Carefully add the spring rolls to the hot oil in batches, frying for about 3-4 minutes or until golden brown and crispy.
Drain and Serve
Once fried, remove the spring rolls and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce.
