Preparation of Noodles

Soak the Rice Noodles
Place the rice noodles in a large bowl and cover them with warm water. Let them soak for about 30 minutes or until they are soft and pliable. Drain and set aside.
Cooking the Shrimp

Cook the Shrimp
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook for about 2-3 minutes on each side or until they are pink and opaque. Remove the shrimp from the skillet and set aside.
Stir-Frying

Sauté Aromatics
In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds until fragrant.

Add Vegetables
Add the sliced bell pepper and chopped green onions to the skillet, stir-frying for another 2-3 minutes until the vegetables are tender.

Add Noodles and Sauce
Add the drained rice noodles to the skillet along with the cooked shrimp. In a small bowl, mix together the fish sauce, tamarind paste, brown sugar, Sriracha, and lime juice. Pour the sauce over the noodles and toss everything together for about 2-3 minutes until heated through.
Serving

Garnish and Serve
Remove from heat and stir in the bean sprouts. Serve the Pad Thai hot, garnished with chopped peanuts, fresh cilantro, and lime wedges on the side.
