Cook the Fries
Prepare the frozen French fries according to package instructions until they are golden brown and crispy.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the sliced onions, mushrooms, and green bell pepper. Sauté until they are soft and caramelized, about 10-15 minutes. Season with salt and black pepper to taste.

Cook the Ribeye
Thinly slice the ribeye against the grain. In the same skillet, push the vegetables to the side and add the sliced ribeye. Cook for 3-5 minutes until the beef is browned and cooked through.

Make the Cheddar Aioli
In a small bowl, combine mayonnaise and cheddar cheese. Mix well until smooth and set aside.

Assemble the Philly Fries
Once the fries are done, place them on a serving platter. Top with the sautéed beef and vegetable mixture, then drizzle the cheddar aioli over the top. Finally, sprinkle with smoked provolone cheese.

Melt the Cheese
Place the assembled fries under a broiler for 2-3 minutes until the provolone cheese is melted and bubbly.

Remove from the oven and serve immediately while hot.
