Prepare the Shrimp
In a large bowl, mix flour, cornmeal, cayenne pepper, salt, and black pepper. In another bowl, whisk together eggs and buttermilk. Dip the shrimp into the buttermilk mixture, then dredge in the flour mixture.
Fry the Shrimp
Heat vegetable oil in a deep skillet over medium-high heat. Fry the shrimp in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Serve
Serve the shrimp po'boys immediately with additional smoked pepper sauce on the side, if desired.
