Method
Marinate the Beef
Prepare the Marinade
In a bowl, mix the ground beef with Korean BBQ sauce. Cover and let marinate in the refrigerator for at least 30 minutes.
Make Sushi Rice Cake
Cook the Rice
Rinse sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to manufacturer’s instructions.
Season the Rice
Once cooked, mix rice vinegar, sugar, and salt into the warm rice. Allow it to cool slightly.
Shape and Cool
Spread the seasoned rice into a greased dish and press down firmly. Refrigerate for at least 1 hour to set.
Cut and Fry
Cut the rice block into rounds. Heat oil in a frying pan and fry the rice cakes until golden brown on both sides. Remove and drain on paper towels.
Cook the Burgers
Grill the Beef
Preheat a grill or stovetop grill pan over medium-high heat. Form the marinated beef into patties and grill for about 4-5 minutes on each side, or until cooked to your desired doneness.
Grill the Scallions
In the last few minutes of cooking the patties, add the scallions to the grill and cook until slightly charred.
Assemble the Burgers
Build the Burger
On the bottom half of the burger bun, spread garlic mayo. Add the grilled beef patty, a fried sushi rice cake, a generous scoop of kimchi, and top with grilled scallions. Finish with the top bun.
