    Prepare the Beer Batter

    In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper. Gradually add the beer, stirring until the batter is smooth.

    Fry the Chicken

    Heat oil in a deep fryer or a large pot to 350°F (175°C). Dip each chicken thigh into the beer batter, allowing excess to drip off, then carefully place it in the hot oil. Fry until golden brown and cooked through, about 8-10 minutes. Drain on paper towels.

    Cook the Bacon

    In a skillet over medium heat, cook the peppered bacon until crispy. Remove and drain on paper towels.

    Prepare the Collard Greens

    In the same skillet, add the collard greens and sauté until wilted, about 5-7 minutes. Season with salt and pepper to taste.

    Toast the Rolls

    In another skillet, melt the butter and toast the burger rolls until golden brown.

    Assemble the Sandwich

    On the bottom half of each toasted roll, layer the fried chicken, a slice of Colby cheese, crispy bacon, collard greens, and a generous dollop of sriracha mayo. Top with the other half of the roll.
