Method

Meats

  1. 1

    Prepare the Meats

Trim excess fat from the pork shoulder, brisket, and chicken thighs. Pat dry with paper towels.

  2. 2

    Apply the Rub

In a bowl, mix together all ingredients from the 'Rub' section. Rub the mixture generously over all sides of the meats. Let sit for at least 1 hour, preferably overnight in the refrigerator.

  3. 3

    Smoke the Meats

Preheat your smoker to 225°F (107°C). Place the pork shoulder, brisket, and chicken thighs in the smoker. Smoke for approximately 1.5 hours per pound of meat, or until the internal temperature reaches 195°F (90°C) for the pork and brisket, and 165°F (74°C) for the chicken.

Sides

  1. 4

    Prepare Coleslaw

In a large bowl, combine shredded cabbage, carrots, and your preferred coleslaw dressing. Mix well and refrigerate for at least 30 minutes before serving.

  2. 5

    Bake Cornbread

Prepare cornbread batter according to package instructions or your favorite recipe. Pour into a greased baking dish and bake at 400°F (200°C) for 20-25 minutes, or until golden brown.

  3. 6

    Cook BBQ Baked Beans

In a pot, combine canned baked beans with BBQ sauce, diced onions, and bacon if desired. Simmer on low heat for 30 minutes, stirring occasionally.

Sauces

  1. 7

    Prepare BBQ Sauce

If using homemade BBQ sauce, combine your favorite ingredients in a saucepan and simmer for 30 minutes. If using store-bought, simply heat it over low heat.

  2. 8

    Add Hot Sauce

Serve hot sauce on the side for guests to add to their liking.
