Method

Pudding Base Preparation

  1. 1

    Combine Dry Ingredients

In a large saucepan, whisk together the sugar, flour, and salt until well combined.

  2. 2

    Add Milk

Gradually whisk in the milk until smooth and no lumps remain.

  3. 3

    Heat Mixture

Place the saucepan over medium heat and cook, stirring constantly until the mixture thickens and begins to bubble.

  4. 4

    Incorporate Eggs

In a separate bowl, beat the eggs. Slowly add a small amount of the hot pudding mixture to the eggs while whisking to temper them. Then, gradually whisk the egg mixture back into the saucepan.

  5. 5

    Finish Pudding

Cook for an additional 2-3 minutes, stirring constantly. Remove from heat and stir in the vanilla extract and butter until melted and smooth.

  6. 6

    Cool Pudding

Transfer the pudding to a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Allow to cool to room temperature.

Assembly

  1. 7

    Prepare Bananas and Wafers

Slice the ripe bananas into thin rounds. Open the box of vanilla wafers.

  2. 8

    Layer Ingredients

In a large serving dish, layer the bottom with vanilla wafers, followed by a layer of banana slices, and a layer of the pudding. Repeat the layers until all ingredients are used, finishing with a layer of pudding on top.

  3. 9

    Add Whipped Cream

Spread the whipped cream over the top layer of pudding. Optionally, you can garnish with additional banana slices and crushed vanilla wafers.

  4. 10

    Chill Before Serving

Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld and pudding to set.
